One of my favorite, customizable recipes that has great flavor and even some healthy greens. Feel free to add some meat or some additional veggies like peppers and enjoy!
4 teaspoons coconut oil
2 cups chopped baby spinach (fresh or frozen)
2 cups cooked brown rice (cooked)
2 cups canned black beans, drained and rinsed
1 teaspoon sea salt
1 teaspoon garlic powder
1 teaspoon cumin
1 avocado, chopped (optional)
1 cup chopped tomatoes (optional)
Directions
1. Heat a large pan on medium-high heat. Add
coconut oil to the pan, and melt. Add spinach
and sauté until wilted.
2. Add rice, beans, sea salt, garlic powder, and
cumin. Cook until all ingredients are heated
through. Remove from heat.
3. Right before serving, gently fold in avocado
and tomatoes.
